In my experience hunting and eating primarily wild game for the last ten years, this is the moment that matters most when it comes to the quality of your meat. Having a plan for breaking down and “processing” the animal is key. Getting it cooled down, not cross contaminating it with unnecessary dirt, hair or undesirable gut liquids all factor in. I try to never have the meat contact fresh water as well. Aging it in the fridge before freezing ect. It’s an art in and of itself and I’m still learning all the time. 📷 @jesseyonover #axisdeerhawaii
