I dont always have time for elaborate meals so this is something I can make in 20 minutes tops INGREDEINTS: • Day old white rice (1 cup uncooked for measurement) • 1lb peeled and deveined shrimp • 1 cup frozen mixed veggies • 1⁄4 chopped onion • 2 tbsp avocado, peanut, or canola oil • 3 eggs • 2 tbsp Light soy sauce • 2 tbsp Dark soy sauce • 1⁄2 tbsp corn starch • 2 tsp White pepper • 1 tsp sesame oil • 1 cup bean sprouts • 1⁄2 bunch scallions DIRECTIONS: 1) Season peeled and deveined shrimp with white pepper, corn starch, soy sauce, and rice cooking wine. 2) In a wok or pan, add 1 tbsp oil, 3 eggs saute until almost cooked through and set aside. Add in the shrimp and cook 3-4 minutes until opaque then set aside. 3) Add 1 more tbsp oil to the wok and add in minced garlic, chopped onions, and mixed frozen veggies. Stir until veggies are softened. Then add in day old white rice and start breaking the rice down. Once broken down add in light soy sauce and dark soy sauce for color and 1 tsp sesame oil. 4) Once it’s almost done at the last minute mark throw in bean sprouts and scallions and saute until slightly softened.
