This is what tartine dreams are made of — make this easy fresh pea and vegan ricotta tartine for breakfast, lunch or dinner.
Ingredients:
-Fresh multigrain bread
-Cooked peas
-Breadcrumbs
-Vegan Ricotta
-Vegan Pesto
-Beet Hummus
-Chioggia Beets (toppings)
-Shallots (toppings)
-Chili Oil (toppings)
-Pea Sprouts (toppings)
To make 6 tartines: (15 minutes)
Slice 6 bread tartines, toast and set aside.
In a large bowl, add 3 cups of fresh peas, and 1 1/2 cup breadcrumbs. Then add 1 cup vegan ricotta (I buy the one from @kitehillfoods). Then mix thoroughly. Add 3 tablespoons of vegan pesto. Mix again to coat all ingredients evenly. Set pea and ricotta mixture aside.
Chop 1/2 cup of shallots in small cubes, and thinly slice 2 small raw beets.
Get your toasted tartine and spread your beet hummus. Add your pea and ricotta mixture, as well as your shallots and raw beets for toppings.
Optionally, you can add chili oil and pea sprouts.
