Creamy, spicy and vegan? We check all those boxes with this week’s #QraRecipes is Creamy Bell Pepper Pasta! 🌶️ ʀᴇᴄɪᴘᴇ: • 1 cup Cashews, soaked overnight • 400g of Dry Pasta, of your choice • 1 Yellow Onion, sliced • 1 Red Bell Pepper, sliced • 5 Garlic Cloves, diced • 1⁄2 cup Nutritional Yeast • 1 tsp Chilli Flakes • 1 tsp Salt • 1 tbsp Olive Oil • Sweet basil, For serving ᴛᴏ ᴍᴀᴋᴇ: 1. Cook pasta till al-dente and reserve 1 cup of pasta water. 2. Saute onions, peppers, and garlic in olive oil with salt and chilli flakes for 8 minutes or until fragrant. 3. Transfer to a blender and add in cashews (and the soaking liquid), nutritional yeast and pasta water. 4. Blend till smooth and adjust seasoning if needed. 5. Combine with cooked pasta over low heat for 2 minutes. 6. Top with chilli flakes and sweet basil.
