vegan tofu lettuce wraps by @averyday.eats 🥬 these pf changs inspired lettuce wraps are the perfect high protein, low calorie, 20 minute meal for those nights where you want restaurant quality food but don’t want to leave your house. it uses basic ingredients, comes together super fast and it is one of those dishes that tastes even better the next day when you have the leftovers. ingredients and instructions below!

ingredients:
-1/4 cup + 2 tbsp soy sauce (or tamari or coconut aminos)
-1 1/2 tbsp tomato paste
-1 1/2 tbsp rice vinegar
-1/2 tbsp coconut sugar
-1/2 tbsp sriracha (@yellowbirdsauce)
-1 tsp toasted sesame oil
-1 tsp grated fresh ginger
-14 oz extra firm or firm tofu
-3 cloves garlic, minced
-8 oz water chestnuts
-butter lettuce
-optional for topping: green onions, sesame seeds, sriracha

how to:
-make your sauce: combine the soy sauce, tomato paste, rice vinegar, coconut sugar, sriracha, toasted sesame oil and ginger into a bowl and stir to combine. set aside while we prep the tofu.
-drain your tofu and wrap it in a paper towel. lightly squeeze it to remove some of the moisture. no need to press it for this recipe! crumble the tofu into a pan over medium-high heat and cook for 5-10 minutes until almost all of the moisture is gone.
-add in your minced garlic and cook for another 2-3 minutes. then add in your sauce and drained, rinsed and chopped water chestnuts. cook for another few minutes to warm everything through and remove any excess liquid
-done! let the tofu cool for 5-10 mins before serving in butter lettuce leaves and topping with green onion, sesame seeds and more sriracha.
