Cowboy caviar but make it a pasta salad If you are going to make something this weekend, make this cowboy caviar pasta salad. It is everything you love about cowboy caviar made into a healthy pasta salad with tons of veggies, protein, and a zesty sauce. It is a delicious dish that you will want to make all summer long Recipe: ▫️2 8 oz boxes of pasta shells (I used chickpea pasta to make it higher-protein and gluten-free) ▫️1 can of drained and rinsed black beans ▫️1 can of drained and rinsed black-eyed peas ▫️1 can drain sweet corn ▫️1 green bell pepper ▫️2 bell peppers (orange, red, or yellow) ▫️1/2 red onion ▫️ 1-pint cherry or grape tomatoes cut in half ▫️1/4 cup chopped cilantro ▫️6 oz feta cheese (vegan or regular) Sauce: ▫️3 limes juiced ▫️1/4 c olive oil ▫️1/4 c red wine vinegar ▫️1 T maple syrup ▫️salt and pepper to taste Cook your pasta and let cool (I like to cook pasta 1-2 minutes less than the package says to keep it from getting mushy). Chop veggies and drain your cans of beans, peas, and corn. Mix together lime juice, olive oil, maple syrup, and red wine vinegar. In a large mixing bowl add all your ingredients and toss with dressing.
