Lunch today: Gluten-free pasta with a red wine & tomato sauce 💜 The sauce is inspired by the Panamanian dish “Tamal de Olla” (that my friend @juicybitnina introduced me to) and includes caramelized onions, garlic, capers, green olives, raisins, passata (tomato purée), achiote oil, oregano, bell peppers, chili peppers, red wine, salt & pepper.
