Another midweek hero! My cod and tomato gnocchi bake is super easy, healthy and delicious! You can easily swap out the fish for salmon, chicken or even sliced sausage if you prefer. (Serves 2-3) To make, you’ll need: 1 small onion 2 garlic cloves 1 tsp mixed herbs Around 30g Black olives (ideally sliced) A handful of cherry tomatoes 1 tin of good quality chopped tomatoes 1 tbsp tomato purée 1 pack dried (or fresh) gnocchi 2 cod fillets A lemon Seasoning Fresh parsley to garnish Hope you enjoy!!!
