🧟🌽Corn...but make it Spooky! Meet : Huitlacoche! Or corn smut, or corn truffle. It’s a common delicacy in Oaxaca and is technically a plant “disease” caused by the fungus Ustilago maydis. It typically grows after a particularly rainy season in sweet corn that hasn’t been sprayed with fungicides. Side note: I like to tell this to farmers that spray their sweet corn, because if you’re lucky enough to get corn smut, it’s much more valuable than a standard ear of corn.
