pasta salad w/ tofu feta by @averyday.eats! pasta salad has been and always will be one of my all-time favorite dishes, so i love this version because itโ€™s got lots of protein (~30g per serving) and it keeps me full. itโ€™s the perfect dish to meal prep for packed lunches and it gets better and better as it sits in the fridge. oh and it comes together in just 20 minutes. recipe and instructions ๐Ÿ‘‡๐Ÿผ . pasta & veg: -8oz chickpea or lentil pasta (@eatbanza) or pasta of choice -1 heaping cup diced cucumber (around 1/2 english cucumber) -1 cup diced pepper (around 1 medium) -1/2 cup diced red onion -1 15oz can of cannellini beans (or any bean of choice, or chickpeas!) -optional: tofu feta for topping (recipe a few posts back!) . dressing: -1โ„4 cup extra-virgin olive oil @getgraza -2 tablespoons white wine vinegar -juice from 1 lemon -1 tsp honey or maple syrup -1 large garlic clove, minced -1 tbsp italian seasoning -1 tsp dijon mustard -salt and pepper to taste . bring a pot of water to a boil and cook the pasta according to box instructions. while pasta is cooking, prep and cut your veggies and make the dressing by adding everything to a small bowl and stirring to combine. when ready, drain and rinse your pasta under cold water and then combine the noodles, veg and dressing together in a large bowl. done! . #vegan #veganprotein #plantbased #plantbasedprotein #veganeats #protein #lunch #lunchideas #pastasalad #easyrecipes #wellness #guthealth #fallfashion #outfitinspiration #wieiad #whatieatinaday #fulldayofeating #mealprep #pasta #easyrecipes #easyrecipe #breakfastrecipes #thatgirl #explorepage
