“Next up we have some more Blue Fin Tuna from Spain, this time the O-Toro, the underside of the belly, the fattiest part of the fish. This one has been topped with a slice of fresh pineapple and brown sugar and then hit with a blowtorch, not enough to cook the fish, but just enough to lightly caramlize the sugar and release the juices of the pineapple. It’s then hit with some more of our home made soy sauce and freshly grated wasabi root. Please enjoy!”
