Blueberry whipped chia seed pudding is a creamy chia pudding with a mousse-like texture that is high-protein, vegan, gluten-free, and tastes like a blueberry muffin. Plus it is a fun purple color and you can get creative with yummy toppings 🫐 Blueberry whipped chia seed pudding (makes 2): ▫️1 1/2 c milk ▫️6 T chia seeds ▫️2 servings of vanilla protein powder ▫️1 c frozen blueberries ▫️optional add 1/2 t cinnamon, 1/2 vanilla extract, and 1/4 t salt In a blender add milk, chia seeds, protein powder, frozen blueberries, cinnamon, vanilla extract, and salt. Stir together with a spoon and let thicken in the fridge for at least 30 minutes or overnight. Once chia seed pudding has thickened blend in the blender until it forms a smooth and creamy consistency.
