Made purple dumplings with a purple cabbage while wearing purple pants 💜 I love playing around with natural ways to color dumpling wrappers and using purple cabbage is one of my favorite ways! It can be a little tricky though. Pale purple dumplings don’t look very appetizing so you really need to boil a lot more cabbage than you think.
I’m simmering half a medium head of purple cabbage with just 1 cup of water with the lid on, for about 15 minutes, until the water is deeply purple. Then I use that water for the dough. The dough is 300g ap flour, pinch of salt, and 150g purple water. Knead until smooth, wrap, and rest for at least 30 minutes. Now you’re ready to pleat purple!
