Salmon 1 tbsp Chosen Foods Classic Avocado Oil Mayo 4 lemon rounds, thinly sliced Directions 1. Preheat your oven to 425°F. 2. Spray a large baking pan evenly with avocado oil to coat. Add the Brussels sprouts, sweet potato cubes and red onion to the sheet pan and season with 1⁄2 tsp salt, 1/8 tsp pepper and 1⁄4 tsp garlic powder. Spray a second coat of avocado oil on top. Roast for 15 min. 3. While the veggies are roasting, pat dry the salmon filet and spread the mayo in a thin layer, season with salt, pepper and garlic powder. Cut into 4 pieces and set aside until you pull out the vegetable tray. Bring the tray out of the oven and carefully make some space in the center for the salmon filets and return to the oven for 5 more minutes. 4. Turn the oven to broil for 3-5 minutes or until you see golden brown on the salmon and veggies. Watch them closely so you don’t end up burning your perfect meal.
