ROAST DINNER SERIES - EP.2 Roast potatoes! Struggle to get roast potatoes with a crunchy outside and a fluffy inside? Follow my tips for the perfect roastie! My greatest tip upfront: if at all possible, do NOT cook your potatoes and meat in the same oven. There is so much water added to a lot of meat these days which almost creates a steaming effect in the oven, meaning a crunchy coating is almost impossible. Before we got our new kitchen, my boyfriend actually cooked our meat on the BBQ one Christmas so I could use our single-door oven for the potatoes! (Works pretty well, might I add.) You’ll need: - Maris Piper, King Edward, Yukon or another potato suitable for roasting - Fat of your choice (options include goose or duck fat, beef dripping or vegetable oil) - Salt and pepper - additional seasoning including paprika, garlic, thyme or rosemary. I recommend putting your roasties in the oven when your meat has about an hour left to cook.
