vegan crunchwrap by @averyday.eats ❗️there are no words for how good these are. these taste crazy similar to the real thing but feel light, fresh and still get you ~25g of protein. ingredients, products and instructions below 👇🏼

-1 burrito sized tortilla (i used @sietefoods)
-vegan queso (i used @goodfoods. @kitehillfoods and @sietefoods are other great options!)
-vegan chorizo (i used @uptonsnaturals. If you don’t have access to a vegan alternative, use beans/refried beans!)
-1 corn tortilla (baked in oven at 350F or in a pan until crispy)
-vegan sour cream (i used @foragerproject)
-shredded lettuce
-diced roma tomato
-optional: piece of a tortilla to cover the middle

warm up a large pan over medium heat. once hot, add your burrito tortilla and warm up for a few seconds on each side until it is pliable. lay the tortilla out on your cutting board and to the center add a layer of the queso and the chorizo. then add the crispy corn tortilla, followed by a hefty serving of sour cream, lettuce and diced roma. if using a tortilla piece to cover the middle, add that in before moving in a circle around the corn tortilla, folding the burrito onto it as you go. add top side down back into the pan and cook for a few minutes until golden. flip over and cook a few more minutes. once both sides are crispy, you’re done!
