The recipe is the OG of chili which was born in Texas and was originally known as Chili Con Carne (chili with meat). This chili is about the meat and the flavors from the dried chiles. There are no fillers such as beans, noodles or rice in Texas Red. If you like those, it’s fine, but that is not traditional Texas Red Chili. This is also the State Dish of Texas - in 1977 it was RESOLVED by the House of Representatives of the State of Texas, the Senate concurring, That the 65th Legislature in recognition of the fact that the only real “bowl of red” is that prepared by Texans, hereby proclaims chili as the “State Dish of Texas.” This recipe is enjoyable to make so I hope you try it.
