Easy Crunchy Beans with Tahini

Ingredients:
- 500g green beans
- 4 tbsp salt, for cooking
- 1⁄2 sea salt
- 1 tbsp olive oil (I recommend @goldengroves)
- 1/4 cup flakes almond
- 1/4 cup pumpkin seeds
Dressing:
- 2 tsp lemon juice
- 2 tbsp tahini
Directions:
- Bring a pot of salty water to boil and add beans.
- Boil for about 4 to 5 minutes, or until they're soft enough to bite but haven't lost their color.
- While beans are boiling, add almond and pumpkin seeds to a pan and toast until slightly golden and crunchy. Take off heat and set aside.
- Remove beans and soak in an ice bath for 1 minute (this will help with the crunch). Remove and drain in a colander.
- Combine the beans with 1⁄2 tsp salt, olive oil, a large bowl. Toss the beans until the salt has dissolved and the beans are shiny. Place on serving plate.
- Whisk dressing ingredients together until smooth and runny (you can add one tsp of water at a time if it needs it).
- Drizzle dressing over and sprinkle with toasted nuts and seeds.
