Rolling rolls by hand is a true labor of love. To roll properly your work surface should not have too much flour on it. You want to use the friction between the dough and the table to help you form a nice tight skin around the roll. This allows the bread to proof evenly and gives you a beautiful crumb. We’ve shaped every single roll we’ve ever made by hand for the last two decades... But we just invested in Adobe rounder which will automate this whole process.
