Big hair don’t care, fry-steam veggie dish for when you’re wondering what to cook next...
Quick farinata that I frittata’d (no eggs!) using some of the few veggies I grew this summer - little cherry tomatoes that are speedily ripening and need using fast and courgette - my fav quick cook veggie for getting on the plate. Also some herbs from the garden - chives are so easy to grow and if you forget about them the bees will thank you for the flowers. This farinata is made using chickpea flour and rice - I added a splash of almond milk as I had some to use up though I usually use just plain ‘ol water and make it unctuous with a bit of extra virgin olive oil and/or ghee. Mahi loves this dish as it’s soft and easy to eat. It’s perfect for fussy eaters thanks to it’s ‘hidden veg’ - peel the courgettes and they’ll conceal beautifully. It’s yum with chutney, or ketchup or whatever floats your boat and I like it hot or room temp (packed lunches start again next week!). Find the recipe in the link in my bio or in stories 😋
