R&D. I love testing out new ways to present traditional Filipino dishes. This is based off a dish called “Tortang Talong” which is an eggplant omelette. I’m playing off the strong Spanish influence that is often overlooked in Filipino cuisine. With innovation comes the challenges of keeping the flavors familiar to those who grew up eating dishes like this. Another challenge is the fact that our menu was redesigned to focus on take out. Unfortunately, that means this particular dish will not make the menu until we do in house dining. But we’re still hopeful that we can serve it in the future.
