Repost @pizzeriabianco I just had to take a moment to not only thank my dear friend and constant source of inspiration @alicelouisewaters for coming to visit our little pizzeria in DTLA ... but to thank her for all she has done for myself and so so many in our industry , in our kitchens our gardens our planet , a global good conscience of making ... people places and things better than she found them ... as a young chef in late 80โ€œs, anytime I could get up to the Bay Area for a day of inspiration + direction, the last stop was always a late lunch upstairs @chezpanisse where I would marvel at the restraint , confidence , balance , a simplicity overflowing w complexity I saw that from the outside ... what u left out was equally important as what u put in , all under an umbrella of farmers and artisans that fell into an amazing team of talent that knew exactly what to do (and not do) to it ... the first time she came to visit my little pizzeria in PHX ๐ŸŒต was in โ€˜94 I had my head down while I was shaping dough and I hear a voice say Hi are you Chris ... Iโ€™m Alice Waters .... I looked up to the other side of the pass and had no words just ummmm ummm welcome and an honor to meet you .... She then said โ€œjust make me something โ€œ I had no VIP stuff to go to or a secret caviar or truffle stash ... I just had simple but the best things I could gather from our small local farmers or our neighbors backyards , I think it was a stupidly simple salad of fennel but thankfully perfect little desert apricots ... followed by the simplest pizza on my menu the marinara ... w a side of marinated Anchovies.. We made her a similar stupidly simple meal the night before last ... she continues to inspire and I am eternally grateful ๐Ÿ™๐Ÿผโค๏ธ
