Tomato risotto. Today while going through notes I realized that all I did with this menu was find different ways to serve tomato and shiso together. I remember while working for a really aggressive French Laundry alumni that I would get berated for using an item more than once on a menu. Maybe this is my middle finger to him. 🤷🏻‍♂️ Risotto cooked in tomato water with crème fraiche, butter and a skosh of parm reg, marinated tomato, ricotta basil and... shiso. Def does not suck.
