I love to prepare simple dishes and use the freshest seasonal produce and little else.
One of my favourite salads in spring uses three ingredients: fresh young broad beans, basil and burrata. If you don’t grow broad beans or are unable to buy them in their pods, buy a packet of frozen broad beans instead.
To make the broad bean salad, pod the beans, lay on a platter, sprinkle over a few pinches of flakey salt, drizzle with olive oil, tear the burrata into a three pieces and lay on top of the beans, drizzle a little olive oil over the burrata, and spread the leaves from a bunch of basil over the broad beans and burrata.
If you’re using frozen broad beans to make the salad, boil a pot of water that’s quarter filled, pour in the frozen beans and cook for a few minutes. Test if the beans are just thawed by taking one bean and check it’s texture, the bean should be bright green. Drain and pour onto a plate to cool. Pod the beans and use in the salad.
