(Specifically: cartoixà de marina aka xarello vermell, a nearly extinct pink-skinned xarello variant, with 6 days on the skins.) Cesc Boronat’s first vintage was in 2014, the first year I had a business card with the word ‘sommelier’ on it. He recuperated an abandoned winery in the scrubby hillsides on the coast northwest of Tarragona that his grandfather had made wine in a century ago. (This bottling—‘Lleona’, the lion—is named for the last horse his grandfather worked his vines with.) In a village of 480 with no other independent wineries, in a region where so many winegrowers are in hoc to the Cava factories, Cesc is part of a new generation of young Catalán producers whose stewardship of ancestral sites is worth celebrating. #ostudioBTG
