Welcome to my new series “Cooking for My Man Until He Forgives Me for Sabotaging His First Proposal Attempt and Proposes” Shrimp Ceviche is perfect for the summer and such a delicious meal for any seafood lover. It’s really easy to make, but very time consuming. Ingredients: 1 lb Washed & Deveined Shrimp (VERY FRESH) 8-10 limes Salt Chili Flakes 1 Large Cucumber De-Seeded & Diced 2 Tomatoes Diced 1-2 Avocados Diced 1 Medium Red Onion Diced 1-2 Jalapeños Handful of Radishes (optional but adds a great crunch) Handful of Cilantro Hot Sauce & Tortilla Chips for Serving 1. Devein, wash and chop up your shrimp 2. Squeeze enough lime juice to completely cover the shrimp. Then cover the bowl of shrimp and leave in the fridge for at least 1 hour to let the shrimp cook in the lime juice. 2. While the shrimp are cooking, prep all your veggies. 3. After the shrimp have fully cooked, they should be nice and pink, add the shrimp to the veggie mixture and toss with chili flakes and salt to taste. Add some of the lime juice to your veggie and shrimp mixture for extra limey goodness. 4. If you can, let the mixture chill for another 30 min so the flavors can really percolate and serve chilled with hot sauce and chips. Ceviche can last in the fridge for 24 hours, and yes it will taste even better the next day. Enjoy ✨ #mexicancooking #ceviche #latina #mexican
