#ad These passion fruit Eton mess cupcakes are the PERFECT way to welcome summer and I’ve partnered with @ocado to show you just how to make them☀️ These are ideal for a spontaneous summer gathering or alfresco afternoon tea and I’ve got the recipe for you! Vanilla bean sponge: 130g unsalted butter 130g caster sugar 1 tsp vanilla bean paste 2 large eggs 130g self raising flour 1/4 tsp bicarbonate of soda 1 tbsp whole milk For the passionfruit curd: 6 passionfruits 100g caster sugar 40ml lemon juice 25g cornflour 100ml water For the buttercream: 1/3 of the cooled curd 200g unsalted butter 175g icing sugar 200g meringues Method: 1. For the cupcakes, preheat the oven to 150c and line a cupcake tin with 9 cases. Beat the butter and sugar with the vanilla bean extract until pale, and add your eggs with the flour, bicarbonate of soda and milk. Divide equally into the cases and bake for 12-15 mins. 2. For the curd, heat the ingredients in a pan until thickened. Leave to cool. 3. For the buttercream, whip the butter and curd until light and fluffy before adding the icing sugar and beating until combined. Crumble over the meringue and fold in. 4.
