I've been in love with a little vermouth as a daylight drink ever since I lived in Basque Country. I was young, it was 2008, I thought my favorite cocktail was a negroni, I couldn’t afford Campari. Vermouth, though? Vermouth was literally cheaper than water. At our favorite place to drink vermouth in the Casco Viejo, the bartender there would ask if you wanted yours with or without ’gotas'—meaning, drops from the house bitters he kept in an unlabeled bottle on the backbar.
