Tiramisu is one of those desserts you keep returning to and will never stop ordering at your favourite Italian. And if you’re wanting an Italian summer vibe like me this year, this recipe is for you 🇮🇹☕️ Layers of coffee soaked sponge fingers and a mascarpone cream filling are met with a chocolatey surprise which you won’t want to miss 🍫 Although I need to know if I’m just tiramisu obsessed or do you guys love it as much as me? 💚🍫☕️RECIPE☕️🍫💚 Ingredients: 500g mascarpone, room temperature 600g double cream 175g icing sugar 2 tbsp vanilla bean paste 3 large eggs plus 1 egg yolk 400g sponge fingers 200ml fresh espresso 55g cocoa powder, with extra for dusting Method: 1. In a large bowl, whip together the mascarpone, cream, icing sugar, vanilla bean paste and eggs. Set aside. 2. Next, brew the espresso. Whilst still warm, dip the sponge fingers in the coffee, making sure to dip both sides. Don’t let them get soggy- only 2 seconds on each side should do. 3. Line the base of a 12 x 8 inch baking dish with the soaked fingers and top with 1/3 of the mascarpone cream. 4. With the next 1/3 of the mascarpone cream, mix in the cocoa powder to create a chocolate mixture. Blob small amounts over the whole layer of the first mascarpone layer and swirl to create a marble effect. 5. Top the marbled layer with the remaining sponge fingers and finish with the final 1/3 of the mascarpone cream. Dust the cocoa powder over the top, covering the whole surface.
