Best glass of white wine I’ve ever had.✨ I admittedly don’t know much about the wine industry, so I was shocked to learn that the US permits additives in their wine—like concentrated grape juice to enhance color and sweetness, and even adding water to adjust alcohol levels. They also allow adding acids and sugars more liberally than in the EU to balance flavors. I wonder if that’s why wine in the US often gives me a headache, but drinking a glass of Swiss wine did not? Our guide, who has spent time in the US, agreed that US wines gave her headaches too. And don’t get me started on the Gruyère cheese... my aversion to dairy seems to disappear here where non-pasteurized cheese exists. My gut loves it.
