👑🦀 Tostadas
RECIPE 👇🏼
INGREDIENTS:
1 lbs king crab legs (btw imitation crab totally works for this if that’s your thing. I LOVE imitation crab)
1 cob of corn, roasted/grilled
1 tbsp Kewpie mayo
1 tbsp mexican crema
Lemon juice
Lemon zest
1-2 tbsp pineapple juice
Two radishes, julienned
1-2 tbsp yuzu
1 avocado
1/2 shallot
1 tbsp cilantro, finely chopped
Corn tortillas
Frying oil
Jalapeño, thinly sliced for garnish
Sambal chili paste, garnish
Tajin, garnish
METHOD:
- preheat oven to 450°F
- tightly wrap 1 lbs of crab legs in aluminum foil
- place your crab legs on a baking sheet. Pop them in the oven for 15 minutes (if thawed) 25 minutes if frozen
- once done, remove from oven. Crack open the shells and remove the meat once cooled. Shred and set aside.
- grab your corn and rub with avocado oil. Place on a wired baking sheet and broil on high, rotate corn so it’s evenly charred on all sides
- in a medium bowl, add your shredded crab meat, corn off the cob, radishes, pineapple juice, touch if lemon juice & zest, Mayo, crema and salt to taste. Mix. I personally don’t like too much cream/Mayo but adjust to your liking
- in a separate bowl add your avocado, cilantro, finely chopped shallots, yuzu juice and salt. Mash into a guac.
- fry some tortillas in neutral frying oil to turn them into tostadas 👌🏼
- now assemble your tostadas with a layer of your yuzu guacamole, pineapple crema king crab, slice of jalapeño, a dab of sambal chili paste & Tajin.
