Favorite weeknight meal since 2017! Ingredients: ​​1 lb ground turkey 2 tbsp olive or avocado oil 1 yellow onion, diced 2 cloves garlic, minced 1 tbsp chili powder 1 tsp salt 1 tsp black pepper 1 tsp garlic powder 1 tsp cumin 1 bell pepper, diced 2 cups broccoli florets, chopped 1 large sweet potato, roughly peeled and chopped into small cubes (regular potatoes work here too) 1/2 cup water 1/2 cup shredded mozzarella cheese Cilantro to garnish Greek yogurt Instructions: Heat avocado or olive oil in a large skillet over medium heat. Turkey time: Add onion and garlic and saute until fragrant, about 2-3 minutes. Add in the ground turkey and break it up with a wooden spoon or masher. Cook until the turkey is just browned. Add the chili powder, garlic powder, cumin, salt and pepper and mix well. Add the veggies: Add the bell pepper, cubed sweet potatoes, broccoli, and water. Stir, reduce heat to low, and cover for about 15-20 minutes or until potatoes are tender and water is absorbed. Serve: Add additional spices if needed and top with shredded mozzarella, cilantro, and a dollop of Greek yogurt or sour cream.
