Yacon harvest. Been waiting for this! I love growing something a bit different and adore the crunch of this South American root veg. Surprisingly, it needs no cooking and is delicious raw tasting a bit like a pear with a water chestnut like texture.

It has reached super food status in recent years - a syrup can be made from roots that is said to have many health benefits and is used as a ‘healthy’ sweetener. I don’t know about all these claims, but I just enjoy eating them. And they’re perennial so can be grown year on year and stock built up. They just don’t like the cold winter so lift and bring tubers inside a bit like dahlias.

Cut right back and store crowns in damp compost over winter. In spring crowns will produce various shoots that can be divided into individual tubers potted up then planted out after the frost.
