Aglio e Olio is the ultimate Italian dish to make after a night out 🍷 It’s super simple and comes together in the time it takes to boil your pasta! Lemon and parmesan aren’t traditionally used in this, but go ahead and add some if you like! Here’s how I made it: - 1/2 lb spaghetti (reserve the pasta water) - 1/4 cup olive oil - 5 cloves garlic, thinly sliced - Red pepper, to taste (I accidentally used an insane amount, don’t do that) - 1/4 cup fresh parsley 1. Start by bringing a pot of heavily salted water to a boil. Add in your pasta and boil for about 5-6 minutes (it will finish cooking in the sauce). 2. *Right when you add your pasta, start on the sauce* In a large saucepan add in your olive oil, garlic, and red pepper over medium low heat. You want to add everything to a cold pan so the oil nicely toasts and doesn’t burn the garlic and red pepper. Let it sizzle for a few minutes but be very careful to not let the garlic burn. 3. Add in a half a ladle of pasta water followed by your very aldente pasta. Continusouly stir for about 5-6 minutes, or until your pasta has finished cooking. You may need to contiue adding more pasta water as it cooks. 4.
