Olive Garden Zuppa Toscana! And it’s even better than the original 🤤 Let me know if you make it! Here’s how I did: ⁃ 1/2 lb bacon, cut into small pieces (or do a full lb if you want to add half to the actual soup, I recommend this way actually) - 1 lb hot Italian sausage, casings removed and broken into bite sized pieces (can sub mild) - Jar of sun-dried tomatoes in oil, chopped and use however many you like (this is optional, use butter in place of the sundried tomato oil in step 3 if you choose to not use) - 1/2 yellow onion, diced - 8-10 cloves garlic - 4 cups chicken broth - 2 cups water - 1.5 lbs Yukon gold potatoes - 1/2-1 tsp Chicken bouillon, to taste - Tony’s to taste - Salt, pepper, chili flakes to taste (about 1tsp each) - 1/4 t paprika - 2-3 cups kale - 2 cups cream or half & half - Parmesan and bacon to top! 1. In a large stock pot, cook your bacon over medium/medium high heat until nice and crispy. Remove from the pan and drain some of the grease, leaving behind a couple teaspoons or so. 2. NOTE: These instructions will slightly differ from my video, but I forgot to cook my sausage separately and then remove from the pan, so follow this. Cook your sausage in the same pan, letting it sit undisturbed for a few minutes to get a nice brown crust. Continue cooking until brown and cooked through. Remove from pan. 3. Reduce heat to medium and pour in the sun-dried tomato oil straight from the jar (about 2tsp or butter if you’re not using the tomatoes). Add in your onion and a small pinch of salt, sauté for about 5 minutes or so. Throw in your garlic and cook until fragrant, about 30 seconds. 4. Add in your chicken broth, water, potatoes, chicken bouillon, Tony’s, salt, pepper, red pepper, paprika, and chopped sun-dried tomatoes. Stir and bring to a boil. Boil for about 10 minutes, or until your potatoes are fork tender. 5. Add in your cream, cooked sausage, and kale. Stir and bring to a simmer for another few minutes. Taste and adjust your seasonings if needed (I added a touch of extra salt, black pepper, and red pepper). 6. Serve immediately and top with fresh parmesan and your crumbled bacon.
