my new year’s resolution is to not get any more kimchi stains on my clothes 🫠 a cold weather classic, especially when you somehow always have excess kimchi in the fridge. if you’ve never tried korean tofu kimchi before, this is your sign. ingredients: • 1 lb thin-sliced pork belly • 1 pint kimchi (i used a jar of @Mother-in-Law’s Kimchi) • 1 pack firm tofu • 1 tbsp sugar • 1 tsp gochujang • 1 tsp soy sauce • 1 tbsp minced garlic steps: 1. cut pork belly into small bite-sized pieces 2. cook over medium-high heat until almost fully cooked 3. sprinkle sugar over pork belly and let it caramelize 4. add the full jar of kimchi (cut into bite-sized pieces) 5. add garlic, gochujang, and soy sauce, then mix well 6. cover and let simmer for 3–5 minutes 7. boil tofu in water for about 2 minutes, then drain and plate 8. finish pork belly + kimchi with sesame oil, sesame seeds, and green onions Cute kimchi apron from @Hedley & Bennett #koreanfood #easydinner #cozymeals #cookwithme #lunchinspo
