Cacio e Pepe Orzo 🧀 I had half a box of orzo left from my last episode, so I figured why not do another easy, one-pot orzo dish! Grill some chicken or veggies in the same pan, and you’ve got a super easy dinner that comes together in 20 minutes or less. Here’s how I made it! - 4 T butter - 2-3 cups water or chicken broth (I recommend chicken broth) - 1 cup orzo - Salt, to taste - 1 T black pepper, plus more for garnish - Red pepper, optional - 1 cup parmesan, plus more for garnish 1. In a large sauce pan, melt butter over medium low heat. Add in your black pepper and toast for about a minute or two. Add in your orzo, stir, and toast for a few minutes. 2. Slowly pour in your water, about 1/2 a cup to 1 cup at a time (add in about 1t of salt here). Continuously stir until the orzo is finished cooking, should take about 10-12 minutes. You might need to fluctuate between low and medium-low heat. I used about 2.5 cups of water. 3. Add in your freshly grated parm and touch of extra butter (optional). Stir, adjust your seasonings, and serve. 4. Top with black pepper, parmesan, and red pepper (optional).
