Last year, the city’s restaurant in the sky was sold. Not to a multinational dining conglomerate. To Ryan Thorsen, the 34 year-old who for years worked by the side of longtime steward and owner Bertrand Hug. A role earned.
His question: How do you add some new life and ideas to an institution, without crushing the history and soul? You don’t buy a Picasso to turn it into a Banksy. Thorsen asked for a little help from Mauricio Courturier, an art-school designer who’s created some of San Diego’s most compelling rooms. And this is the result. It unveils to the public Oct. 11.
