Tiramisu is great but have you ever tried a tiramisu cake? Hear me out. I know tiramisu is beloved but this is a game changer and such a good idea for a summer cake for all your friends and family🍰☕️ 🍫☕️RECIPE☕️🍫 For the vanilla sponge: 175g unsalted butter, softened 175g caster sugar 1 tbsp vanilla bean paste 3 large eggs 175g self raising flour For the chocolate sponge: 3 large eggs 260g caster sugar 1 tbsp vanilla bean extract 150g self raising flour 75g cocoa powder 1 tsp baking powder 1/4 tsp salt 2 tbsp espresso powder mixed in 100ml hot water 100g unsalted butter, melted For the mascarpone filling: 400g mascarpone cheese 175g icing sugar 190ml double cream 1 tbsp vanilla bean paste For the soak: 200ml fresh espresso or 4 tbsp espresso powder in 200ml hot water METHOD: 1. Line 2x 8 inch cake tins with parchment and preheat the oven to 160c fan. For the vanilla sponge, beat all the ingredients together until combined. Transfer to one of the tins and bake for 35-45 mins (this can vary between ovens) until a skewer comes out clean. 2. For the chocolate sponge, whip the eggs and sugar with the vanilla until pale. Sift half the dry ingredients into the bowl followed by half of liquid, mix and repeat. Finish by adding the melted butter in slowly whilst mixing on a low speed. 3. For the mascarpone filling, beat the ingredients until thick and creamy. 4. Once all the cakes are cooled, slice each into 3 thin layers. Layer them with the mascarpone filling, soaking each layer in the espresso before the next layer of filling, until all the layers are stacked.
