Add the rosemary simple syrup ingredients to a small saucepan and bring to a boil, stirring until sugar is dissolved. Remove from heat and let sit for 20-25 minutes. Discard rosemary. 2. Carefully light rosemary on fire until smokey, place on plate, then turn a coupe or martini glass over to cover the smoked rosemary. 3. Add gin, 1 ounce rosemary simple syrup, honey, and lime juice to a cocktail shaker. Add ice and shake well. 4.
