Temaki is meant to be eaten right away in order to enjoy the nori at its prime crispy-ness. When you let it sit, the seaweed starts to wilt due to the weight of the ingredients inside accompanied with the warm rice. These wrappers encase and preserve the nori until you are ready to eat.
