Here’s how @triedandtruerecipes whipped up this #vegan Rigatoni Alla Vodka With Caramelized Fennel ⤵️
What you need:
Fennel, cut into strips
Tomatoes (mix of canned + fresh)
Crushed red pepper
Pinch of sugar (if your canned tomatoes are acidic)
Splash of vodka
Coconut cream
Rigatoni
1️⃣ Sauté fennel for 20 mins, then add halved cherry tomatoes, salt, pepper & crushed red pepper
2️⃣ Cook for 7–8 more mins, then add vodka & simmer for 5 mins
3️⃣ Add crushed tomatoes, then simmer for 15 mins
4️⃣ Add coconut cream & little sugar (if needed), then simmer for 10 mins more & season to taste
5️⃣ Mix in pasta water & cooked rigatoni, then toss to coat
6️⃣ Serve with fennel fronds, basil & a drizzle of EVOO
