🌱 GRUB RECIPE: QUICK ZESTY PESTO PASTA ✔️ This one is actually my boyfriend Anthony’s recipe! Full recipe below. Today we’re celebrating one year of eating great, traveling the world & celebrating love together. Wouldn’t want to do it with anybody else by my side. That’s my best friend! 🗣 Anthony says make sure to add the sun dried tomato garnish. It makes the entire dish! You’ll notice the recipe is plant based as Anthony is a huge believer in plant based eating and he’s definitely turned me onto it too. You can sub out dairy ingredients but give it a try this way! You won’t be disappointed. 💚 📌 QUICK ZESTY PESTO 1️⃣ In any type of blender combine the following: 2-3 heaping packed cups of basil 3 tablespoons of olive oil 1/2 cup of fresh lemon juice 4 garlic cloves 4 table spoons of pine nuts 6 tablespoons of water 1 tablespoon of (non dairy) heavy whipping cream 1 heaping table spoon of nutritional yeast (or Parmesan) 1 tablespoon of red pepper flakes 2-3 tablespoons of balsamic glaze 2️⃣ Blend until mixed 3️⃣ Boil a pound of pasta to al dente then drain. 4️⃣ Pour pesto over pasta and mix. 5️⃣ Chop up 2 cups of sun dried tomatoes. 6️⃣ Garnish each bowl with chopped, sun dried tomatoes, pine nuts and a dash of lemon juice. 7️⃣ DIG IN AND ENJOY! 👉 Thanks for sharing this with us, Ant & happy anniversary dude.
