Pork loin chunks are marinated overnight in a mixture of sweet smoked pimentón de la Vera, dried oregano, dried chilli flakes, ground cumin, sherry vinegar, olive oil and seasoning.
After marinated the meat is thread onto metal skewers and barbecued until the meat is charred and tender.
Served with patatas fritas (fies) and and a simple salad, these are, as @jose_pizarro described them: devilishly good!
