Hot Grill Summer Week 4: Wings 🐓 @heathrilesbbq #hotgrillsummer25 My Dish: Extra Crispy Cajun Wings w/Buffalo Ranch Drizzle What I used: Heath Riles Cajun Creole Garlic Butter Rub, Simple Citrus Rub and Buffalo Seasoning. How I made it: Marinated 4lbs of chicken wings in a bowl with buttermilk, HR Cajun Creole Garlic Butter, HR Simple Citrus, pickled jalapeño juice, cayenne based hot sauce and 2 eggs. Let that sit for a couple hours in the fridge. Made a buffalo ranch using 3/4 of a ranch packet, about 4tbsp of HR Buffalo Seasoning, 3/4 cup mayo, 1/4 cup sour cream and about a cup of buttermilk. Whisked it until it was an even consistency. After a couple hours I breaded the wings. For the breading I used equal parts AP flour and corn starch, a whole mess of HR Cajun Creole Garlic Butter and Simple Citrus, as well as some extra fresh coarse ground black pepper. I simply pulled the wings out of the marinade and breaded them one at a time making sure to get an even coat. Then the most important step, got the breaded wings onto a wire rack and let them sit in the fridge for an hour. This allowed the breading to really adhere to the meat and kept it from falling off during frying. Fired up my Weber Genesis and used the Dutch Oven insert to get some peanut oil up to about 375 degrees. Then I fried the wings in 3 batches, pulling them when the internal temp was reading 185 degrees and the breading was nice and golden brown. Topped the wings with some fresh sliced Fresno peppers and that HR Buffalo Ranch, served with carrots, celery, lemon wedges and some regular ranch on the side. These wings were the crunchiest and most delicious wings I have ever made. Hand down. The Wife and Father In Law agreed! The depth of flavor was just insane, and the buffalo ranch was 🤌🏻.
