Vegan Cajun Burrito πΆπ₯π₯΅
INGREDIENTS
* Large tortillas
* Vegan cajun chicken
* Striped red bell pepper
* Garlic
* 1 tbsp Cajun seasoning (optional)
* 1 tbsp olive oil
* Scallion sliced
* Jalapeno sliced
Spicy tots
* 5-6 russet potatoes
* 2 tbsp cornstarch
* Salt pepper
* 1/2 tsp chili powder
* 1/2 tsp paprika
* 1/2 tsp cayenne
* 1/2 tsp garlic powder
* Oil for frying
Chipolte aioli
* 1 cup vegan mayo
* 1 Chipolte pepper in adobo (minced)
* 1 clove garlic minced
* Juice of 1 lemon
* 1/4 tsp cumin
* 1/2 tsp chili powder
RECIPE
1. Tots: boil the potatoes for 8-10 minutes or until fork tender. Peel and grate the potatoes.
2. Add to a bowl and mix in the cornstarch, salt, and pepper. Lightly wet your hands and form the potatoes into tater tot shape. Add to a baking tray and freeze for at least half an hour.
3. Fry at 350F until golden brown (about 5 min). Add to a bowl and toss with the chili powder, paprika, cayenne, and garlic powder.
4. Preheat a lightly oiled pan over medium heat. Add the vegan chicken and sauce for about 2 min.
5. Add the sliced pepper and garlic and stir fry for about 5-7 minutes or until cooked through. Season with salt, pepper, and 1 tbsp of Cajun seasoning.
6. Aioli: to a bowl add the mayo, pepper, garlic, lemon juice, and seasonings. Stir or blend until smooth.
7. Assemble: lightly heat the tortilla for about 20 seconds so it becomes more pliable. Add the chicken, tots, sliced scallion, jalapeno, sauce, then roll it up.
8. Once formed, place the burrito on a hot oiled pan and toast the outside. Enjoy!
