Operated by @grovebaygroup in collaboration with @foodnetwork–famed chefs @chefmcinnis and @chefjaninebooth, the restaurant’s closure was framed as a real estate decision rather than a reflection of waning demand, with the group calling the concept a “special chapter” in its portfolio. Opened in 2017, Stiltsville paid homage to Biscayne Bay’s historic stilt houses with a seafood-driven menu inspired by McInnis’s Florida Panhandle roots, earning loyal fans for dishes like coconut shrimp, conch fritters, and Buffalo-style fish wings.
