Custard:
1 1/2 c Half & half
2 whole eggs
1 Egg yolk
3 tbsp maple syrup
1/2-1 tsp freshly grated nutmeg
Optional:
1 tsp Cointreau
The rest:
1 tbsp of butter, for frying, per slice of bread
4-6 slices of stale brioche bread
8 slices of bacon, fried crispy then crumbled
Chives
1 poached egg per Frenchy
Method:
It’s quite simple really, just leave out some brioche bread the night before, if not, it’s cool.
In a bowl, whisk together the ingredients I wrote under “custard”. If your bread is stale, soak it in your custard for at least 15-30 minutes, if not, that’s cool too.
While your bread is soaking, or before you briefly dip, prep some bacon by frying it up, extra crisp and then crumbling it into a savory crumble.
In a pan, slap on some butter and fry your Frenchy slices on medium low heat until they’re golden brown.
Dust over a layer of bacon crumble, chopped chives and top your dreamy dish with a poached egg and behold, the sweet and savory situation of a lifetime. Buen provecho 😌
