National Mustard Day is coming up, and as a Chicago-area native (where people are serious about their mustard), I am celebrating in a flavorful way. Mustard is often seen
as just a hot dog topping, so I decided to showcase its true versatility by creating an
elevated Carolina Gold BBQ sauce using my favorite mustard out there: @plochmans.
This tangy, savory sauce is the perfect match for pulled pork sandwiches and shows
how mustard can shine far beyond the hot dog bun. If you’ve never had a mustard
based BBQ sauce before then give this one a try! Here is how you can make it too.
In a medium cast iron skillet or non-stick pan, combine the ingredients below then stir
and bring to a simmer for 10 minutes then let it cool and transfer to a squeeze bottle.
3/4 cup @plochmans original yellow mustard
2 tbsp ketchup
1/2 cup apple cider vinegar
1/2 cup honey
1/4 cup dark brown sugar
2 tbsp maple syrup
2 tsp Worcestershire sauce
1 tsp garlic powder
1/2 tsp cayenne powder
1/2 tsp salt
1 tbsp hot sauce
Grab a bone in pork shoulder or pork butt from the store. Score the fat cap with a knife,
rub all sides of the meat down with mustard for a binder and then season with your
favorite BBQ rub. Place the meat onto a preheated smoker or grill at 250 degrees over
indirect heat. Let the meat cook until it hits 160-170 degrees internal, typically about 4-6
hours. Once it hits 160-170 degrees internal, transfer the meat into a foil pan with about
half a stick of butter, one cup of apple juice and a few more dashes of that BBQ rub.
Cover the pan in foil and return to the grill. Let the meat continue to cook until it hits
200-203 degrees internal or is probe tender. Remove the meat and let it rest, covered,
for at least one hour. Once rested, remove the foil, pull out the shoulder bone and shred
the meat.
Build the sandwiches using your favorite sandwich bun, pulled pork, Carolina Gold BBQ
sauce, and whatever toppings you prefer. I went with pickles and homemade crispy
onions. Most importantly, enjoy!
