🍍PINEAPPLE REFRESHER!🍍 Should you wish to give your weekend some tropical vacation vibes, this tart-sweet pineapple treat is a one-way ticket to a fancy island. (Feel free to embellish this fantasy with whatever details float your boat. On my fancy island, I’m sipping this while getting a foot massage and re-reading The Idea of You.) __ Pineapple Refresher Cocktail (Makes 1 cocktail) Ingredients: 2 ounces light rum (If you prefer dark rum, or that’s what you have, feel free to use it! Tequila or vodka? Also great.) 2 ounces pineapple juice 1⁄2 ounce Cointreau (Grand Marnier or Triple Sec are also great!) 1⁄2 ounce fresh lime juice For garnish: (optional) Thin lime round and/or maraschino cherry __ Instructions: 1️⃣ Add all the ingredients to a cocktail shaker with ice. 2️⃣ Shake until well chilled. 3️⃣ Strain into a martini or coupe glass and garnish with *For a lighter cocktail, serve this on the rocks and top it off with club soda! __ TO MAKE A MOCKTAIL: Substitute coconut water (or milk!!) for the rum, and fresh orange juice for the Cointreau.
